Start the job you have in hand, see how you like it, continue the process with the other company, and if they give a preferable offer and/or the current job starts throwing up red flags, just break the news to them that you accepted another opportunity that you were interviewing for at the same time and leave it off your resume.

I'm actually literally in this position right now, having started a new job on the 12th while continuing the much-slower hiring process on another job that may be preferable. In my first in-person interview (after the screening call/preliminary phone interview) I did mention that I'd accepted a position to start shortly, but was still genuinely interested in continuing the hiring process. I said I wasn't wasting their time (nor mine) by continuing to interview, but that my availabilities to meet may be less-open after the 12th. The interviewer assured me that they understood, that they appreciated my being forthcoming, that they would consider my application just the same, and would try to accommodate my availability if I moved to the next/final round of interviews. We're now set for a virtual meet with the CEO this Thursday after 4pm.

It'd be annoying to break the news to the people I've just been getting onboarded with, and I'm still not 100% sure if I would indeed take this other job if they did make me an offer (there's pros and cons to each, with salary basically comparable, I'd have some thinking to do) but I'd do it if it was right for me, and anyone in business would do the same if they were in my position. But I was open about considering a number of options in my interviews for both, and it did distinctly put them on their back foot in both cases because I did, genuinely, have my pick of opportunities and could afford to say no to whoever failed to sell me on their business as the best place to move forward with my career.

tl;dr take the bird in the hand, but do what's right for you in the end.
