bitcoin also has OFAC compliant blocks. both BTC and ETH have this because people are allowed to look at the mempool and mining/staking nodes are allowed to pick whichever transactions they want. it's not a big deal, it just means you have to wait until an OFAC-noncompliant node validates your transaction. if you want to pretend like it's a big deal, both BTC and ETH would need a hard fork to eliminate it. and it has absolutely nothing to do with centralization.

proof of stake is non fungible and allows targeting individual stakers by design.

you can try to censor transactions on bitcoin but mining pools have zero capture, while the entire incentive for staking ethereum now rests in the hands of a single company, flashbots.
