To cut water lines, you can cause a lot of damage with water damage. You can also fuck with the gas lines of a house to have em leak the day before you leave the property. Just put the right corrosive on joints or fittings. something that also works is dumping hot wax down the drains, preferably the toilets so it causes a nice clog behind the walls or concrete. They'll have to pay a pretty penny as you can't snake wax.
