Engineering can be summed up in two sentences. If it breaks, make it stronger. If it doesn't break, make it weaker. That's about all there is to it. Anyone can build a bridge that stands forever, but only an engineer can build a bridge that just barely stands and is planned to be obsolete and need repairs in exactly 10 years. Why would a company intentionally miss out on money and profits by designing a permanent product instead of a product that needs constant updating.

Most engineers copy paste work online or into existing spreadsheets and CAD files. Almost no engineers you know understand math and science well, and could design something new from scratch.

Traditionally there was a stronger divide between technicians and engineers and engineering was much harder and had higher expectations. With the "everyone must be a college graduate" meme the technician space has evaporated.

This is true of comp sci as well.
