what would happen if I just start keying in random seed phrases into metamask and I accidentally hit someone else's recovery phrase?
I'm rather new to the whole blockchain thing apart from trading crypto and stock for a few years now, and this was the first thing that came to mind when I created my metamask wallet

That's exactly why many people only use Metamask for 1 single transaction and use a cold wallet like a Ledger device for permanent storage.
What I often do when I need to transfer, is search for a wallet with a little bit of ETH left in it from the previous user, so I can transfer for free, many people don't empty their wallets and leave a little bit for gas to transfer coins.
A lot of people made a profession out of getting these leftover ETH piece from abandoned wallets, that's called mining.
