Hardware wallet is not a cold wallet replacement, it can be a cold wallet helper tool (you inevitably need to restore it some day, so rather than a laptop you can restore to a hardware wallet device). More importantly it's keeps your crypto dealings more secure by allowing you to keep your private keys offline to sign transactions. This can he done with an air-gapped PC but a hardware wallet is just more convient

Oh I should say they are also useful to generate cold/paper wallets securely. You can generate a seed phrase, get your public keys and then wipe it. Now you have a paper wallet that was securely generated outside of a PC. The private keys and seed phrase never leave the hardware wallet

Are coin listings on a cold wallet set at the time of purchase, or are they based off an online database that updates over time?

It depends on your wallet software. You can use a trezor with third party wallets. For example you can use a Trezor with metamask, so it supports all coins metamask does.

Trezor has a wallet software called trezor suite but you don't need to use it, you can use trezor with electrum, metamask or any other program that supports it. The coins aren't actually "stored" on the trezor, the wallet software just uses the trezor to derive your wallet keys and addresses and sign your transactions

Paranoia would be using a hardware wallet, autism would be generating your own seed to input into said wallet, and mega autism would be following the Glacier protocol. How far you go is up to you, but you could just stop at the first level if you verify your wallet to be safe. I personally root for the Trezor being secure because its firmware is open source and can be built and verified by anyone.

the key and phrase is generated on the device when you turn it on.
you need to be in physical contact with it to send any transactions. it doesn't need to plugged in or connected to the internet to receive transactions
your piece of paper that the seed phrase is a copy of your trezor. the piece of paper with your seed phrase on it is also your wallet
