Krakow is really cool, more generally Malopolska is a very nice place if you like nature and mountains - but they really need to do something with their coal pollution. Last time i went there (last month actually) the smog above Krakow and even some remote places south of Krakow was really thick, could not even see 10 m before me.
Otherwise, i could recommand Gdansk, even if its a bit too much liberal politically speaking (looks and feels a bit like Hamburg to be honest). But still, comfy life, and the beach going from Gdansk to Gdynia, via Sopot is absolutely fucking nice and cool, and well arranged if you like long walks / running or biking. Plus the night life is great.

The Western part isn't that cheap anymore. Visited the tricity area for the first time back in 2015, visited it again last summer. Gdansk was almost a different city, so many new buildings. Those guys are developing at a speed similar to Western-Europe in the 1950s. The average income and prices are rising rapidly. Rents are still ok but the real estate prices in cities like Gdansk or Krakow are already approaching Western-Europran levels. In ten years time there will be no difference anymore. Poland is turning out to become the most prosperous country in Eastern Europe. Best you check deeper into southeast Europe. Bulgaria, Croatia, ... They're still quite cheap and still have the advantage of being in the EU.

I won't list the pros because you seem already convinced, so just to focus on cons:
- semi-authoritarian, extremely corrupt government that will probably stay in power for a long time, continuing to erode civil rights and ruining any remains of public services
- worst air quality you can imagine, some places worse than others, but overall really bad
- climate is okay-ish, but winters are long, dark and sad
- public healthcare is in bad shape, if you get something serious (that's not covered by private health insurance) you're fucked - unlike in most other EU countries

To be honest, the best alternative to Poland, to keep the same kind of spirit, would probably be Czechia.
