I am an Eth user. I only simp for it because it's the only way to do what I need to do. However, I fail to see why a high price is beneficial for the platform at this stage. I do think ETH will eventually eat a lot of stuff but don't really fundamentally understand why the token should go up.

Security. If you have hundreds of billions locked up in DeFi coins that run on ETH and you can buy up enough stake to control the nodes for less than the value on chain, then the system isn't secure. So in transitioning to proof of stake, the value of the network token has to be expensive enough to prevent this. Fees will come down once proof of stake is activated and even before that with rollups and EIP-1559
