Because there are no mineable coins that are (or will be) worth more than the electricity you spend to mine them.

BTC is of course the exception, but even then you're going to need a much bigger investment than a few shitty laptops.

Because it costs more money to mine them than to buy them. Pretty simple economics. If you happen to have the latest (i.e. not yet released to the public) ASIC miners and zero electricity costs you MIGHT be able to profit more than if you buy. Mining is for enthusiasts and the chinamen that got in early and built gigantic warehouses and now have contracts where they get the latest miners months before the public.
