For the love of fuck, if you have more than a thousand bucks in crypto and you don't have a hardware wallet, get one
I deliberately avoided saying which one I have to keep from looking like a shill. Just do your fucking research and pick the best one. The peace of mind is worth the money, fucking trust me

Why not use paper wallets and keep them in a safe in your house? I have done this..

But honestly, at this point, I'm considering giving up. Just putting my crypto on Coinbase for their insurance, 2fa, etc. and knowing that if they're hacked or something I have a decent chance to get my money back.

It was this exactly. I took my fucking time going through the instructions. Plus I made sure to send small test amounts of each crypto before sending over the remaining bulk, so that took a little time too
