The rich are a problem in and of themselves, they are not actually considered a solution to funding government. Going by MMT, and as made crystal clear this year, the government acts like it has "infinite money" and can just print whatever it wants to. It creates money and puts it into the system, it doesn't make sense to say it then has to tax people to finance itself. Hyperinflation is a possibility, and one of the mechanisms to prevent that are taxes. Taxes are also used to encourage people to use the country's sovereign currency (if there were no taxes to be paid in USD there'd be less reason to use USD).
So circling back to why we should tax the rich: because they have too much money, too much power. I'm not really in full disagreement with you I don't think, because I agree there are root problems that can be solvable without taxes, but I'm not worried about a slippery slope to taxing the poor too, unless the tax policy is written by people who aren't aware the government can just print money and they actually seriously think they're financed by the people.
