Except with the current token release schedule the circulating supply will be 10x higher by next year. Uni has an expected current valuation of 1.5 billion. That's a 20x from current market cap.
A 2x is not a justification to hold UNI over LINK which has an estimated market cap valuation 10 times higher than it's current market cap based on current use. LINK is also always improving. My point is the token release schedule will eat any gains which might have been 'guaranteed'

look what happened with sushi, it actually got comparable volume to uniswap because of aggregators like 1inch.
Then the reverse migration happened because sushi dumped and tax started eating into gains, compared to uniswap's 0.3%
It's enough for someone to make a new token that gives 0.005% to token holders - as this time liquidity providers would have the choice of earning 0.25% on uniswap + a minuscule share of uni (2% annual inflation) or very high initial inflation somewhere else.
