Since lockdown I’ve actually lost about 15 pounds and maintained about the same amount of muscle over the course of 4 months now. About 1 pound a week. I’m still working a job as a developer and WFH so my life is still very sedimentary.

First of all, you need to understand one thing: if you want to lose weight and then get back to your precious eating habits you will never make it. A "diet" isn't some temporary thing, it's a complete change of your eating habits. Now if you're willing, you can eat a lot of red meat, chicken, mushrooms, and low cal greenies like spinach, Brussel sprouts etc... every once in a while you can eat a pizza or a burger, you are allowed to have fun too, but you need to keep your calories intake under control overall.
Exercice everyday, at least 30 minutes. Drink plenty of water.

The only difference a fed or starved state makes is the desire to eat more and how much we can eat before satiety kicks in. Dumbbells: snatch, clean, squat, press overhead. Light weight, ton of reps

Do pull-ups. Accumulate 20, 30, 50 as many sets as needed to get there

Cardio for fat loss: long and slow
Cardio for conditioning: intervals. 1:00 work, 1:00 rest

Play around with it as you get fitter

Exactly, you have two way to lose weight, either you increase the amount of calories consumed by your body so that it rises above the amount you take in (though sport and exercise)
Or you reduce your calories intake (through a diet)
The problem of fasting is that it has a perverse effect, while it does reduce your calories in to 0 while you're doing it, your body notices that it is not getting any calories. When you body notices that, it reduces its own consumption, if you fast for 3 days, your body will not consume the usual 2k kcal per day it usually does, it will consume less, and when you eat again, chances are you will overshoot the new consumption of your body, and gain weight, your body certainly will try to store food because it experienced a moment of scarcity and it doesn't know if it will happen again and risk being life threatening. It actually takes a few days for your body to get back to a normal calories consumption when you stop fasting.
If that work for you, good, but it never worked for me, and all the people I know, intermittent fasting can even make you gain weight.
My best advice is simply to eat low calories food and red meat.
