I think you are forgetting one big thing. The DEX is a very grey area regarding legality and right now while it is in stage 1 the team have to be very careful about how much they push the DEX as while it’s still in their control until Hydra they have a big target on their back if anyone wants to try and shut them down. In really basic terms as far as I understand: Rather than pushing every little transaction to the main blockchain of whatever token, all the little trades are summed up and then every once in a while the total sum is added to the main blockchain. This way the time and cost of pushing to the chain is only endured when the lightning channel closes, rather than for every single trade.

Think of USDT, that’s a wrapped asset and it’s supposed to be backed by USD. Now if you were to cash out all of the USDT in circulation to USD do you think you would get 1:1 value? I don’t think so, USDT at this point only keeps its value because nobody can prove without a doubt they don’t have the $’s to back it but if someone eventually does it’s value goes to zero and that’s the same with any wrapped asset.
