You're using a relativistic foundation as the definition of truth. At the core of your statement you're saying that truth is only what is decided upon by the masses, and in this case, the masses using a rigorous process to come to consensus is what makes it true. What you're describing as truth is simply the process of inductive reasoning. There can be mountains of evidence that support an idea, and that holds up until it doesn't. It takes one contradictory case to invalidate the entire thing. Just because a contradiction hasn't happened yet doesn't mean that it won't. In other words, you can't prove that something is true because it hasn't been proved false yet. That's one way that people try to prove the existence of god, except you are applying it to science which is fucking hilarious because you're no different than a zealot for doing that
