I know it's illegal for employers to ask about your marital/parental status (at least in theory, they can still use subtle tactics to find out) but I'm honestly not sure what counts as "better" in their eyes.

Do they want employees who are single and childless because it means no other commitments besides the job?
Or do they actually want employees who are married/parents because it means having large monetary obligations that make them desperate for wages?

It depends on the type of job. The union jobs where I work take literally years for new employees to learn all the niche parts of it. So they hire older people who they know won't quit after 6 months. Then there are the corporate slave entry level jobs at other places that recruit fresh grads who they can burn out and toss aside every 2 years
