average on the higher side rent cost about 4k RMB, so like 600 USD (assuming you don't live in shanghai or beijing)
there's no need to have a car in china when you could get an ebike, did(uber)i, or metro which are all cheap as fuck
that leaves you with at least 1200 USD to spend however the fuck you want

Just stock up and ration your usage. My friend did it when he hopped around Spain, Egypt and Thailand for a year. Once I'm able to cash out on my LINK stack, I'm planning on moving to South America. I've been to Colombia multiple times and could see myself living a comfy life in Medellin, but I'm a bit worried of the fallout with Venezuela and feel that they're one bad election away from going back into freefall. I'd like to travel to more of the countries there and fortunately for me, I speak a good amount of Spanish. So with time, I feel like I could become fluent and make my way around South America with relatively few issues.

Is Uruguay a good option? From what I've read, it seems like a pretty stable country economically, politically, and currency wise. Plus Montevideo and Punta del Este look like it would be a pretty nice place to just kick my feet up and live of my gains for the rest of my life.

Also, I can't remember the name of the book or author, but a Cuban guy from Miami wrote a book about all the different types of Latina women and how they're different from each other. I remember in the interview he traveled all over Latin America and asked women how they differed physically and culturally from country to country. I wish knew the name of the book, but I recall him saying that Mexican women are known for aging the worst of the bunch and Colombian women are they most materialistic and put a high emphasis on having a symmetrical body and aren't afraid to get cosmetic surgery to make it happen. Which based on my time in Colombia is 100% true.

I remember talking to a Canadian ex-pat in Medellin and he pointed out one thing I thought was brilliant. He said that Medellin is one of the few cities you'll go to where a guy can get a girlfriend that would normally be way out of his league in your typical white western city. Like you said, if you have confidence and speak a good amount of Spanish, you can easily get yourself a qt. paisa as long as you're not a complete autist.

I don't mind boring. My ideal setup would be to get a decent-sized house just outside the city with a garage, pool, parrilla, space for a home gym, and a yard for my dogs to run around. That's more than enough to keep me content with life.
