Getting paranoid

As a burger I can only use a few shitty exchanges that offer very little variety of coins. I've used a couple international ones (Binance etc) using a VPN and ended up getting attached to them.

All I know is if one day I get the KYC message, I'm fucked.

Should I move all my assets off those exchanges and start trading on the shitty US ones or I am getting too paranoid about it all?

You shouldn't have coins on exchanges at all. Tons of exchanges have been hacked over the years.
Keep your crypto in a (cold) wallet and move it to an exchange when you need to trade.

Create accounts on metamask when and where you can.. then sometimes you'll have to use a normal browser to access the exchnages that you signed up through metamask.. idk.. im even able to use huoboki

Then at least diversify by using several different exchanges.
I know it's not as convenient as having everything in one place, but it's worth it imo. If you use say 5 exchanges then you will "only" lose 20% of your money to KYC.
