I run an above casual restaurant and I can tell you that A) we have no niggers B) technical maintenance takes up a ton of time.
Look at how much space that thing takes up and it only does 1 thing. Dropping fries takes two seconds and you can build a salad or some other kind of relatively simple plating while they are down. Multi tasking and time management are your biggest assets in regards to smooth kitchen operations.

You would need a machine capable of doing too many different tasks, robots will be able to replace human workers only in the sorts of jobs where one or two very specific tasks have to be done. It's not that you couldn't theoretically make a human-bot, but at that point the actual human is basically always going to be cheaper. Anything that can be turned into factory line work where you have one very specialized bot doing one task perfectly and rapidly will eventually be cheaper than having human workers, or anything where the mental work is very consistent and based on data sets (diagnosing illness from visuals + symptoms, or call center work) so AI can do the job

The problem isn't that it would be much harder to create a law-AI than a plumber-bot, the problem is that no one will accept an AI as being capable of dispensing justice and law, it is seen as a fully human realm where our unique moral sense and intuition is necessary, we feel a deep need for immense and massive flexibility to be able to take into account all sorts of things like the relationship between the people involved, past issues, whether they emotionally seem remorseful (this is a HUGE part of how judges determine sentencing). Ultimately what we feel is just law relies too much on empathy and things that are not data at all. Most humans will reject any AI being in charge of law.

A plumber bot is actually very difficult to properly make, but humans care much less about the risk of the bot ruining their sink than the risk that a judge-AI would rule incorrectly due to lack of empathy or inability to weigh the specifics of the relationship between people and circumstances. There's just a lot more we 'lose' if a judge-AI fucks up than if the plumber bot fucks up.
When a human judge fucks up, there is also the possibility for justice there, for other humans to see that the judge fucked up and overrule his ruling and potentially punish the judge. There isnt as much room for retribution with an AI or for errors to be corrected depending on just how automated the system is.

Already is. Hawkeye is pretty much the global standard for large diameter concrete pipe automation. I know around here producers operating costs are ~$80/ tonne for whatever diameter they want then they mark up several thousand percent and sell it to municipal contracts. Good racket. Only need a handful of wages in a single plant. After sunken capital costs and payroll you're literally just buying rock sand rebar and cement.

Automation has already nearly taken over entire sectors and will keep happening.
Just look at agriculture, in the past almost everyone alive needed to directly provide for their own food. 90% of the human race was doing agricultural work. Now it takes only about 3% or so of the human population farming to feed everyone. In this area automation has effectively replaced humans and we can probably expect the number of humans necessary in farming to minimize even more in relation to the total population.
This wasn't a bad thing at all though, now we can feed far more people and the vast majority of humanity can specialize and explore work entirely unrelated to just sustaining ourselves. Without this automation we would not have been able to create everything we enjoy and use right now, we wouldn't have anyone that could make a living off of creating fun consumer products or art. When everyone is farming no one has the time to use their life towards furthering any sort of mental or cultural development. Destroying all the jobs we all could have had growing food didn't ruin us, it simply changed the economy to be centered around other kinds of work.
