I personally think it's the quality of service in relation to the establishment. I've had servers who aren't even expected to have know what's even on the menu and never come around your table after orders are done. Compared to ones who know every ingredient, where the products are sourced and what drinks and appetizers to pair with the dish, and come around to check up on customers at regular intervals.

I still think tipping is bullshit though.
