most of the people do few tx per year
most of the people don't give a shit about paying a coffee with bitcoin
in future they will pay with sidechains and L2 solutions that will be way more flexible and easy to improve than modifying L1
most of the people just want to keep higher decentralization and back compatibility, they don't want shitty hard forks with exotics OP code and a huge OP_RETURN to store cp
also, imagine a miner or a pool that wants a full node after 10 years, it will be impossible to sync, they will be cut out even before starting, unlimited block size is not sustainable, and storing redundant data is extremely expensive if you want real decentralization
you pay once, and it has to be there forever, including cp
