For those of you running nodes...what about the business side? Does it make sense to start an LLC in somewhere like Wyoming to run your node profits through? Is it better tax wise to treat it this way?

you wont be making profits running a node, chances are nobody will even whitelist your node in the first place. for low value data without whitelists the race to the bottom won't allow room for any profit
