Only issue with a truck is Lots of BS about permits and bs with turf wars.
Then you also need to park it after use.
Most hoa will not allow it parked in your driveway.

Anyone seriously looking into diet will probably have a nuanced plan requiring certain macro nutrient ratios or food groups or whichever fad is popular at the time.

The leftover crowd you could cater for, still have the mental obstacle of eating out of the back of a truck. It's a perception problem. "Healthy" is an emotive or superficial thing to a lot of casual gym goers. Drinking shit loads of sugary fruit juices seem "healthy" to them, eating from a food truck would seem "non-healthy" regardless of content.

Profit margins would be slim too. Protein usually follows that classic trio of attributes where you can only pick 2 options.

*Quality here being something "clean" with a good protein per calorie ration.
