Wouldn't it make more sense for Subnets if instead of using their own token for gas they use AVAX, and then use some buy back and burn mechanism on their own token. This would mean Subnet validators are paid in AVAX, so aren't constantly dumping the native token, they aren't being paid through inflation and have potentially better value accrual to the native token from the growth of subnet fees.

I can see several problems, it's more like a stock, harder to raise money launching, potential problems with AVAX becoming deflationary. But surely some subnets would go for this type of structure in the future.

Unlike nakamoto where the probability is based on the somewhat indeterminate likelihood of some actor being able to usurp the longest/heaviest chain at some point in the future, in avalanche the probability is mathematically defined and is parameterized to a specific value which I believe is set to 10^-20. This probability is also only for consensus performed on any single block, once a block is finalized (which occurs in under a second with 0 additional confirmations) it is final forever and the chain cannot go backwards. So basically the chance of a consensus failure is mathematically equivalent to zero and only applies to a single block on a single chain that isn't finalized yet.

It means that an adversarial node trying to double spend would succeed for whatever transactions they are trying to push through for that specific block on that specific chain, despite not surpassing the byzantine safety threshold which IIRC is 80% byzantine. In such a case avalabs and the node operators would have to step in to push a client update that rolls back the chain 1 block and/or some other remediation, definitely not ideal but it would be localized to a very limited number of txs. Keep in mind the probability of electrons spontaneously rearranging themselves inside 80% of nodes to cause a double spend is probably higher than the protocol guarantees breaking.
