I got a more interesting offer. How do I back out of the first one?

Be forward with the original offerer. Simply say you received a different offer that you feel may be more compatible with your future goals. Preferably by phone or in person, email as a last resort...do not text it. Tell them you appreciate what they did and you will keep them in mind for the future. They will be a bit upset but understanding.
ONLY do this if your other offer is IRON CLAD AND A GO.

People don't care about interns. Most people don't even want to have interns around, they are just extra work at the end of the day because they know fuck all and you have to micro manage them to get anything even remotely reasonable out of them.

is spot on, just be kind and don't burn the bridge. I doubt they'd even be upset, they'll probably just call the next retard on their list to satisfy whatever dumb overlord designed an intern program for gibs.

As someone who’s gotten interns to do my whole job by micromanaging, I feel like it’s better than doing the work yourself.

This is not always true, and it likely was not simply an HR troll who chose him. A lot of higher ups become very invested in their interns and stay in contact forever, depending on how closely you worked with them.
