Even in the current state of cryptokitties that is still worth at least double what he paid right now. Yes, cashing out is done by calling a function on the smart contract. Make sure you keep enough ETH to cover gas to cash out however, and you might have to raise the gas limit from what it shows too (I had to do this a few times because the transaction kept running out of gas). But those complications aside, you can be 100% sure it will always be possible to cash out due to the nature of smart contracts.
