Each year more decentralized and centralized exchanges are created, as well as synthetic assets, lending/borrowing protocols and new assets themselves that need their own price feeds.

Nodes will be needed to fulfill all these call request from the ever growing market. This along with all the other services like VRF, keepers, etc

The price feeds are Chainlink's showcase to the world.
If these price feeds were created by private entities, literally every single user would have to pay to even see them.

They do scale, the more users the more paying sponsors.
But the feeds are indeed public, for the simple reason that they're being run by Chainlink themselves, and they want to show how reliable their product is more than they want to turn a revenue from operating nodes.
