Apparently this landlord would rather someone whose employed over someone who has a million in the bank renting their property.

Claiming 1 million “could be here today and gone tomorrow” and therefore is meaningless

So… apparently to landlords an employed person living week to week is more reliable than a NEET with 1 million in the bank.

Faking an education, a job and a regular income is harder than faking a bank statement. And even if it is genuine, you have little way of guaranteeing that's not from a loan from a different bank or just a friend's money or some other sum they pass on the next month. A number on a bank statement with no context is indeed meaningless.

Yes, that's a risk. But you vet the person, the whole package before you sign the contract. Holding down a decently paying job for the last half year is a proxy for a lot of good traits. Those traits are what you want in your future tenant, not the current position/income.
Besides, the real risk is not unemployment, it's accidents/disabilities. That can literally happen to the best and most industrious guy and instantly turn him into an unemployable vegetable, who also gets pitty points from the courts once you eventually evict.
