Oracle products around the Oracle database basically help store large amounts of data and then use that data for different business purposes. For example a telecom company would use Oracle's range of products to bill customers, manage connections and customer relationships. Banks use it for all kinds of transactions one does at the bank. The military uses it for its internal recruitment, inventory management, supply chain and other operational requirements.

Inevitable yes but even that's much to small of a marketcap when staking is live, and trad-fi begins to be swallowed by smart contracts. Afaik traditional finance doesn't use Oracles data for pricing and since that's the biggest market chainlink will have to collateralize, link mc will be much larger than Oracle if even a small percentage of trad-fi moves to smart contracts.
