SHORTS DO NOT EXPIRE
Someone can short a stock as long as they fucking want, no matter what the price goes to. The difficulty is that they have to pay interest fees AND put up collateral. The higher the stock price goes, the higher the fees get AND the more collateral they need, thus the harder it becomes to maintain the short. If one shorter decides to exit (at a loss) instead of put up more collateral, then that's when they need to buy shares at the higher price. This pushes the price even higher, which makes it even worse for anyone else who is still shorting. This is a Short Squeeze.

Days to Cover is not an expiration date. It's just a simple calculation of how many shares are shorted divided by the average number of shares traded each day. Basically, a Days to Cover of 1.5 means it would take 1.5 days for every short to exit IF every single trade during that time was someone exiting a short position.

OPTIONS CONTRACTS DO EXPIRE
For example, if you buy a Call Option to buy 100 shares at $10 on Feb 5, then who ever sold you that contract needs to have 100 shares available to sell you before the contract expires. If the price goes higher than $10 before that date, then they have to buy at a higher price ahead of time... This pushes the price even higher for everyone else who sold Call Options and doesn't own the shares yet. This is a Gamma Squeeze. Call options pretty much always expire on Fridays.
