I'm like you, and I think I can answer your questions.
If you read the Electrum FAQ, it walks you through how to move your virtual shekels to an offline or cold wallet. That's what I'll use for long-term stuff. For actually trading, I'm going to try MetaMask for Ethereum and STA, and Coinbase for BTC. But I'm just getting into it so this might be very bad advice. So far all I've done is buy some Ethereum and turn it into STA on MetaMask.
For stocks, use Fidelity. I'm more confident this is good advice, because Fidelity has a very good reputation and I've already started using it.

Ultimately you want to generate your own keys offline. If you want to use a hot wallet, use one that allows 2 factor for any outbound transfers. I use Trust wallet as it allows me to directly use uniswap on the fly. Hardware wallets are ok, but it's one of those things where we may not know if any exploits previously unknown to the hardware manufacturers. Best idea is to have multiple wallets to keep your stacks decentralized. I know some who keep only one crypto per wallet and then even divide those stacks up to other wallets too. Friend of mine has over 25 different seed phrases for his holdings.
But to be perfectly honest if you're new coinbase is a good starter platform to get your feet wet, then when confident move your coins as soon as you can to your very own wallet.
