Except you can. It just comes down to imagination. Lets use your example. You could fork LINK and create an aggregator contract. Instead of nodes, you have a curated list of trustworthy exchanges providing price feeds, eg. Balancer, Coinbase and Uniswap. You average the price of any coin in the TCR from these curated exchanges in the aggregator contract. Suddenly, you have achieved everything LINK has done, but you don't have any nodes to pay whatsoever. There might be some upkeep costs involved but it would be a hell of a lot less than $5b US.

Kleros can solve most problems. Even the problems better solved by machine, like price feeds, will have Kleros behind the scenes ensuring the system is running smoothly.

No worries. We're all still very early. That example I gave you is exactly what Maker is doing. Within 4 months, both Maker and DAI will have kleros on the backend. But Kleros is going to solve problems which don't even exist yet.
The next stage is derivative contracts which pay profits from longs/shorts into escrow, and you can challenge to recover funds held in escrow in the event of collateral attacks/scamwicks/etc. For just .21 ETH you'll be able to completely ruin CZ's business model.

I'm not sure exactly how that works with appeals that overturn prior decisions (do you get your stake back when it's proven you were right all along?), but even if you don't it'll encourage people who can't coordinate to converge on an honest answer as best they can. PNK solves a real world problem that everyone basically understands. The only real problem to widespread adoption is getting Kleros court rulings upheld by default by the state legal systems. Kleros could very easily take over small claims court and just get rubber stamped by a judge and completely take over simple arbitration and ADR systems. The biggest problem I see is the need for real life courts to ensure that every juror on a given case is from the right state (ie, limit jurors to PNK holders who are citizens of a given state, eg california for california cases). That shouldn't be too hard to implement though.
