I learned from my dad who learned from his dad.
You just need a few practice legs so buy some cheap Serrano legs to practice how to cut it properly. The hardest part is removing the fat and outside in the beginning and in the end when you cut very close to the bone when you're almost done with it.
It takes about 5 practice legs to get somewhat good at it. It's worth it though, if you properly take care of a leg once you cut it (preserving it right etc with the cut fat) than you can enjoy it for a month or two.
