For puts the higher the strike price above the underlying price the deeper ITM it is. Think about it like this, you are paying a fee for the privilege of selling SPY to somebody for the strike price. If the strike price is above the current spot price then you are "in the money" as you can buy SPY for the spot price and then resell it for the strike price of the option you bought. So the option in my pic related with the $500 strike price is about $152.27 in the money considering SPY is right now trading at $347.73
Notice the premium for that option is $162.42 which is about $10 more than the in the money amount. That is the time value you are paying for. If your option were closer to the spot price that time premium would be more and consequently it would be a higher ratio compared to the intrinsic value. You want it to be low for stock replacement though since that $10 is the amount of the option that will fluctuate due to volatility changes, theta, etc.

Since you're buying puts and the puts in question guarantee you the right to sell SPY at $500, it doesn't matter how low SPY goes you can just buy SPY shares and sell them at $500. Imagine SPY is $350 right now and you buy those puts then tomorrow SPY drops to $300. Today you can buy SPY for $350 and sell for $500 netting you $150. Tomorrow you can buy SPY for $300 and sell SPY for $500 netting you $200 dollars. So SPY dropped $50 and you made $50. The more SPY drops the more you make. Calls are what you buy if you think the price is going up. With calls you can buy for the strike price and then sell into the market. The higher the price goes the more you can sell for but the amount you can buy for stays the same.

Yeah the gains once you buy an option at a given strike are dependent on many factors, mostly underlying stock price and time out away from expiration. An out of the money option with time value (extrinsic value) is still worth SOMETHING. Time value approaches zero at expiration. Intrinsic value is just the difference between strike and actual current stock price, so that varies. An option at expiration is only worth it's intrinsic value, and only if it's in the money. If it's out of the money at expiration, it's worthless.

Before the crash I suggested somebody buy XLK 109 calls expiring in July. Imagine my surprise when March happened. As the dip commenced, I suggested he turn the calls into spreads to lower the break even (I thought the market might recover sooner than it did). So for every call, he sold two calls at the same strike price and with the proceeds opened new calls for each short call. Since he was rolling to spreads, it didn't cost any money.
Well, long story short we get to March 20th or so and the premium on all his options has dropped to 1 cent. I felt a reversal was coming so I suggested he buy back all the short legs in hist spreads since they were practically worthless anyway, and just keep the long calls in case a miracle happened.
Then the mother of all V shaped recoveries took off and what started as an investment of a few hundred bucks of OTM calls and what once appeared to be complete loss netted him 5 figures.
