Its because you can just use whatever token that the individual oracle node is dealing with.

Say I have 5 + oracle fee of silver shekels held up in the oracle. The real world data passes through confirming the smart contract is true, the 5 shekels passes through to wherever it was destined to go, and the oracle node operator gets the oracle fee, in silver shekel.

Although with flare, you'll be able to set it to automatically convert those shekels into whatever currency you actually like holding onto, because that's what XRP is good at.
