What will the exchanges do when all the people making millions off crypto trading try to convert them into fiat?
What if you're left holding crypto with no way to convert it into fiat?

Exchanges like polo let you withdraw $25,000 a day with level 2 verification. I guess that's one way.
You can also request a higher limit by contacting them directly. Exchanges like polo have 100mm in volume traded every 24hrs so im sure they could handle a withdraw of that size over a few weeks.

I mean, doesn't matter if it's crypto or not, you're going to find it difficult to withdraw or transfer a million dollars as a civilian through any institution. It's not the sort of money you just take out of an atm or wire transfer instantly. That sort of money triggers a lot of alarms and gets investigated.
