The deflationary aspect isn't that important. Sure any coin could take it's place, but same is true for Bitcoin, or any erc token. A lot of the value the token has doesn't come from the token itself. Once the pool reaches a stable size, it will work as an ETF which is the original purpose. The burn is generally just there to dissuade swinging and speculation.

The stonk token derives it's value from the pool. The balancer would always buy back stonk based off the value of the other tokens. If comp moons, the balancer buys more stonk.
