I have a PhD in math (unrelated to data science/ML), not directly relevant but I guess some employers find it impressive.

Learn Python. R is pretty common especially for more stats-oriented jobs or bioinformatics. I just stuck with Python though, it's much more popular.

I learned pandas and scikit-learn. Did a bunch of MOOCs and put the certificates on my CV. Did a few shitty projects (like the beginner Kaggle competitions) and put them on my github.

SQL is pretty common in job ads, but it's not really a top priority. I picked up basic SQL knowledge and put it on my CV. It's not hard to learn.

Excel, SQL and stats software like SPSS are more for "data analyst" jobs. Also software like Tableau. Maybe Python as well. "Data scientist" jobs are more python and machine learning.

If you want a data scientist job you might need to get experience as a data analyst first.

"Automate the Boring Stuff" is a good book for Python. I also read through most of the book "Hands-On Machine Learning with Scikit-Learn, Keras, and TensorFlow" which was good. I understand NNs and can answer questions about them in interviews, but I don't have a lot of practical experience with NNs. NNs/deep learning get a lot of hype but aren't necessary a lot of the time in practice (exception for some areas like computer vision). I'd focus on other stuff first.

I have no work experience btw.
