Bitcoin's value is what we make it. Bitcoin is right now an alternate currency that is out of the monetary hands of the various govts and jews. If you put your USD into btc, and someone decides to devalue USD, or give your bank account a haircut, or transfer the USD to a new digitized currency, or cause a bank run, etc etc, it won't matter if you have btc.

You can go to TradingView, open up a chart, and look at it on the weekly timeframe. You can see the closing price for the week, and then you can switch to the daily timeframe to see what day corresponds to that closing price.

You can prove it to yourself. And it's not CST. It's using the UTC or GMT timezone.
