For the majority of use cases, simply accepting the risk of incorrect data is better than paying, $0.50 or whatever BS per api call. that could quickly add up to paying thousands of dollars a day for what could just be a hobbyist program.
In other cases, say you want a weather checker, or "was_flight_late?" call, you can still query that data for free from a weather.com service, maybe an airline's website, and since there is little incentive to falsify that data, there's really no reason to spend all that money and time integrating LINK. And if that data source is the sole source of that data, LINK provides zero additional security.
as for the derivatives market, the issue is although there is "insurance" in LINK, you don't really need LINK to fulfill that either. the threat of lawsuits and losing business agreements is risk enough for parties to stay within contract. escrow accounts already fulfill that role.
