I want to transfer some linkies to cold storage and I have a few questions about paper wallets.
If you create a paper wallet offline, how would you go about testing that you have access to it? You need to connect to the internet for that, at which point it is no longer cold storage, since you could potentially be compromised.
Do you just create one, make sure it works, scrap it, create another and trust that it won't somehow be fucked up?

I would just be precise and make sure everything is written down correctly. If you want to make sure, you could try recovering it afterwards. If you're scared that this could have compromised the private key (very unlikely imo), then send a small but decent amount to the wallet and wait for a few weeks to see if anyone steals it.

Personally, I'm paranoid that they will somehow exit scam with everyone's shekels at some point. I guess it's an open source product, but there's always a way.

I've never heard of anything like that happening. Make a test wallet to be sure, as you said. If you're really that paranoid and it's a significant stack, just buy a nano s.
