How does the "marginal cost of mining determines the price of Bitcoin" argument make sense from an economical standpoint? It seems to be an argument which implies that the selling side dictates the price, which doesn't seem right.

Mining bitcoin automatically incurs costs. In order for a miner to recoup the costs, he at minimum must charge X dollars per coin mined in order to sustain his operation. If rampant buying continues and the price rises and stays high then others will take notice and begin to move in on this highly profitable trade. This in turn will produce more coins and push prices back down. The cost of bitcoin will naturally fall to an equilibrium.
