If I were you and have no real knowledge of how Desktop wallets work yet, I would go with Exodus.
Then in the meantime learn how to use Electrum (Cold Storage) with a small amount of BTC. $5-$10 worth. (Download Electrum onto USB key, then transfer .exe to an offline laptop/desktop for your cold storage. And create your wallet offline.

so i understand how to like, back up my wallet.dat file and such I think

but that was my play money and ive never tried to set up anything with my real BTC stack, always just left it on GDAX

The only reason I suggest this method is because you can fuck up and lose your stack if you do not know what you are doing with Electrum (Cold Storage). That is why you practice with a small $dollar amount until you are confident with using it. Ironically it is the best way to hold your BTC if you know what you are doing.

get a god damn hardware wallet. Trezor or Ledger Nano S are the gold standards. keepkey, opendime and others are ok too.

desktop wallets are hot wallets screaming to be taken by hackers, or your roomates when you're afk.
