I just sampled the local (German) RM market. I looked at all the shops on gold.de, plus some others and even ebay and wrote down the numbers. This is not super rigorous or 100% accurate. There are shops I don't know about. I left out all ebay listings with one or few coins because ordering them that way is a hassle with shipping costs and calculating all that is too much work. This also only includes what is available online and I didn't check niche numismatic shops with even higher prices than listed here.

tl;dr:
windmill: 109, 19.50€/coin, total 2028€
church: ~1000, ~13€/coin, total ~13k€
hindenburg: ~1000, ~13€/coin, total ~13k€

Now I don't know how that compares with other coins or what kind of rarity those numbers might imply. But anyway, RM stock seem very low, even for the less desirable RMs.
