I've played against 6 decks, but they shuffle after you see about 25% of the cards. I've found the count is rarely ever good. Most of the time you're just sitting around waiting for a positive count.

It can be done with live online blackjack sites where they show the dealer and card machine. It's best to find somewhere you can watch the count while not playing.
