Still, since it's a fancy kitchen knife, I'd say just look around the internet and find a reputable brand, then buy one that's a finer (higher number) grit, which will give it a more refined edge (but also take a very long time if you're trying to sharpen a dull knife with it) you should be aiming to make a sharp edge sharper if you're using a fine grit whetstone
