the analogy isn't about what happens to the knife, it's about what happens to your had.
If you're cooking in the kitchen or something and a knife falls, it's not worth the risk to try and catch it in the air; let it hit the ground, then pick it up. That's all the falling knife analogy is, a warning to the traders not to try and buy in on strong downward momentum. It's not about what happens to the knife if you try or don't try to catch it.

If you want to make the analogy like that, just imagine that the knife is waaayyyy bigger than you, so trying to catch it with your hand doesn't appreciably change momentum.
