I think the argument is that the token has specific functions built into it for the platform to work. A big one being the ability to vote and arbitrate disputes. Since you'd be doing business without a central authority (i.e. no customer service dept like uber or airbnb) there has to be a way for users to arbitrate disputes and for people to be compensated if they get ripped off. My understanding is that a programmable ERC20 token is better suited to this than Ether and that this is not something you could do with just bitcoin
