You don't need smart contracts to automate things. Amazon Go stores automate payment without cashiers using traditional payment infrastructure. If they used a blockchain, it would be much more expensive for them. Blockchains are good for censorship resistance at the cost of high energy/compute power usage. Centralized companies have no need for that and obviously no desire to waste money on a feature they don't need.
