yes the pasteurised milk is trash, if you can get raw milk then you don't need to and shouldn't boil it, but the pasteurised milk will still make yoghurt after boiling since the pasteurised milk has no active enzymes anymore due to the pasteurisation it needs help to break down the milk proteins and carbohydrates which boiling will do

also to make kefir you would need the kefir grains which is a symbiotic culture of bacteria and fungi, you just need a couple so you can buy them once off of somebody local and then you're good to go
